配 料

猪里脊400g | 笋丝250g | 胡萝卜30g | 青红椒50g | 黑木耳20g | 二荆条泡椒40g | 干辣椒段15g | 白醋20g | 味精6g | 盐适量 | 生抽6g | 糖30g | 生粉30g

1.葱姜蒜切末,泡椒切碎,干辣椒切段,青红椒切丝,胡萝卜切丝,黑木耳切丝,香菜梗切小段。

2.肉切丝用水浸泡,泡出出血水后放盐,味精,糖,蛋清抓匀,再放入生粉继续抓匀。

3.热锅起油,把肉丝滑至八分熟捞出控油。

4.烧一锅开水,依次下笋丝,胡萝卜丝,木耳丝,青椒红椒丝,断生捞出。

5.热锅起油,加干辣椒,葱、姜、蒜,二荆条泡椒碎,郫县豆瓣酱炒香,再加白醋,白糖,味精,生抽调味。

6.倒入肉丝和配菜,大火翻炒,出锅前加香菜梗翻炒均匀,加水淀粉勾芡出锅。

主料:里脊肉400g、胡萝卜1根、黑木耳少许

辅料:葱、姜、蒜、鸡蛋、淀粉、盐、豆瓣酱、糖、醋、生抽、料酒

1、猪里脊肉切丝,倒入适量清水,洗去猪肉里的血水,捞出来挤干水分备用。

2、将肉丝抓散开始腌制,放少量盐、生抽、料酒,再打入一个鸡蛋,抓匀后放入适量淀粉,上浆腌制10分钟左右。

3、胡萝卜切成丝,泡发的黑木耳切成丝,青椒去头去籽切成丝备用。

5、锅中烧水,水开之后先放入木耳焯水30秒,再放入胡萝卜煮30秒,最后放入青椒丝,断生后倒出控水。

6、锅中倒入适量的油,油热之后放入肉丝,炒至肉丝变白后放入葱姜蒜,炒香之后放入一勺郫县豆瓣酱。
