在吃货们的认知里,蒜蓉、粉丝和扇贝算是神仙组合了吧!扇贝蒸锅之后保留着最本真的味道,鲜美又多汁;就连最不起眼的粉丝,沾染了蒜香和扇贝的鲜气,还带着蚝油的咸味,咸鲜又劲道……今天小易来分享蒜蓉粉丝扇贝的家常做法,学会了再也不用去饭店吃了。

所需食材:

扇贝、盐、龙口粉丝、大蒜、小米辣、花雕酒、清水、鸡精、白糖、蚝油、蒸鱼豉油

*** 步骤:

之一步:买回来的扇贝用刷子把外壳刷干净,然后取出扇贝肉放入碗中,用清水多清洗几遍。

第二步:往扇贝肉里面加入少许盐,下手抓拌均匀后,用清水多清洗几遍,彻底洗净后捞出来,把水分挤干后再放入扇贝壳子里面备用。

第三步:龙口粉丝用冷水泡软,然后把粉丝放在扇贝上;准备适量大蒜切成末,小米辣切成小圈备用。

第四步:把锅烧热加入少许食用油,油热之后下入小米辣和一半的蒜末并煸炒出香味;把大蒜炒至金黄后,再加入少许花椒酒和一勺清水;接着调味少许的盐、鸡精、白糖、蚝油、蒜末、蒸鱼豉油并用勺子搅拌均匀;最后把炒好的料汁浇到扇贝上。

第五步:把装有扇贝的盘子放入蒸锅中,上汽之后,蒸五分钟就即可出锅;最后在扇贝上再滴上少许蒸鱼豉油,美味即成。

处理西兰花

入味不发黑的关键!

? 切小块更好入味!将西兰花切成小块。

这样让西兰花口感更均匀,

不会很硬!

? 切好后的西兰花放到淡盐水里浸泡15分钟左右,去除杂质。

? 焯水入底味!锅中水开加1调羹(15ml)盐,再倒入西兰花。

? 颜色翠绿,需争分夺秒!再次水开后,煮15秒即可捞出西兰花。

煮的时间太长,西兰花会发黑!

?无需任何调料!自然解冻后的鲜贝连同里面的油一起倒入锅中,开小火炒3-4分钟。

火太大,外面焦了里面还没熟!

? 鲜贝炒好后倒入30粒玉米粒、100g蟹味菇、2调羹(30ml)水和西兰花,炒制3分钟后加2/3茶匙(4g)松鲜鲜和2调羹(30ml)水淀粉,炒匀出锅!
